Classic Washed. After depulping, the grains are fermented in a tank for at least one day and then washed. After that comes several days of drying on African beds.

Did the fact that Catalino spent almost all of his ‘adult youth’ in the US influence his approach to life and coffee production? On the bank. When he returned to Honduras after eight years of the American dream, he began helping his neighbors transport coffee. At the time, he noted, there were customers who had no problem offering higher amounts for solid, quality grains. Like in a Hollywood movie – he decided to handle the production himself! Despite the fact that the crop is located quite high, IH90 grains have a relatively low density, hence they were treated gently in the kiln. However, we did not want to dampen the fruity stories, so the smoking time was quite short – 9 minutes. Coffee ultra-rewarding and effortless to profile <3
