And you probably already associate this flight well. It has been with us year after year since we put the grains in brown jars. In our opinion, this is the best, even more fruity and floral version of El Llano ever!

Heretical opinions

Peter: “A flight that already has a permanent place on the deep perch of my heart. Plot with yellow catuai on the trees grows literally a few steps from the door of the house on El Llano – my home base on visits to Guatemala. This year is definitely the most floral and fruity in years!”

PRODUCER

El LLano is a farm whose grounds begin literally a few meters from the front door of Raul’s house. And thus our base of departure and accommodation when visiting Guatemala. Located in the beautiful Acatenango region, it is the younger sister of the more popular La Soledad. The vast majority of harvests from El Llano are pure, fruity microlots, and this is also the case here.

TREATMENT

The harvested fruits ferment for up to 40 hours after picking, and only then are they shelled from the peel. Drying royally – on African beds. As a result of years of experimentation, Raul always keeps a thick layer of grains, which he mixes every 40-60 minutes, depending on the sunshine that prevails at the time. The entire drying process takes 12-14 days.
