PRODUCER

El LLano is a farm whose grounds begin literally a few meters from the front door of Raul’s house. Located in the beautiful Acatenango region, it is the younger sister of the more popular La Soledad. The vast majority of harvests from El Llano are pure, fruity microlots, and this is also the case with this washed caturra. At the beginning of the year, we ate ripe cherries here, and now we’re locking burnt beans in jars. Well look!

 

TREATMENT

The harvested fruits ferment for up to 40 hours after picking, and only then are they shelled from the peel. Drying royally – on African beds. As a result of years of experimentation, Raul always keeps a thick layer of grains, which he mixes every 40-60 minutes, depending on the sunshine that prevails at the time. The entire drying process takes 12-14 days.
