FARMA

El Zapote is one of those farms that evoked extremely positive emotions that are hard to describe. Beautifully situated at the base of two volcanoes, with wilderness at the bottom, add to that a rushing, winding river and a jungle atmosphere. Julio is a great guy, with a wealth of knowledge about coffee and a sleeve full of anecdotes. Open-minded, willing to experiment and unusual practices – we will show the results of his work more than once!

 

TREATMENT

After harvesting, the coffee is put into depulping and then fermented for 24 hours in a clean tank. There is a release of the lock, the grains are washed, a preliminary qualitative selection is made. Finally, drying on three-tier African beds.
