As certain as death and taxes is that we smoke a fresh flight of san ramon from La Maravilla every year. Always the same trees, always the same process, always deep and fruitful. There are various theses, for example, that the earth is flat, or that coffees from Guatemala are rather that simple, not very fruity. Both are childishly simple to refute.

PRODUCER

La Maravilla means “miracle” in Spanish. The farm is located in the beautiful high mountains of Huehuetenango. Despite the fact that not so long ago you could only reach it on horseback at most, thanks to Mauricio’s hard work we are pushing a 4×4 there with the obligatory tinted windows. To this day, however, you won’t put a relationship there on Instagram. There is no coverage on the farm. Neither electricity. But in compensation, Mauricio’s wife, Amavilia, makes the best tacos!

 

TREATMENT

A washed-up classic of the highest class. Mauricio is an expert like few others. First, he makes sure that only fruit with a deep maroon color goes into the process. The husking of the beans from the cherries takes place as soon as the coffee is delivered to the washing station. Dry fermentation for 36 hours and mandatory ablution. Drying on the patio, about two weeks, depending on the weather. The result? The ultra-ripe cherries gave a high sweetness. Fruitiness – typical of high-growing coffees from this region. Purity in taste is already mainly the hand of Mauricio and a great process carried out.
