We started the Guatemalan season with maragogype and we are ending it with the same variety! That’s right, it’s those big beans. This time in the natural version, straight from the famous Huehuetenango. The lot from Las Codornices is the pure definition of marago. Dense, sweet, jammy and intense. An aftertaste that counts in hours. It’s a syrup, ladies and gentlemen!

Dry, something like on the Kazakh steppe, but they managed with a clever irrigation system. In the cup, the essence of both variety and terroir. You’ll find a dense and sticky body, with notes of forest fruits, a whole range of caramel and chocolate stories, all rounded off with ripe acidity.”

Las Codornices is a unique place – a farm located in the heart of the driest area in Huehuetenengo, where… no one grows coffee. Well, almost no one! Diana and Hector have created a unique terroir, accomplishing the almost impossible. The plantation is irrigated using a meticulously designed irrigation system, based on reservoirs and water from the river flowing in the valley. An original on a global scale!

The dry and stable climate of this part of Huehue is calling for juicy naturals. Drying is even, with no unexpected changes in humidity or other unexpected weather patern. The result is a deep, fruity profile that offers wonderful nuances.
