Heretical opinions
Ola: “A coffee that I have a huge fondness for. A long time ago I got acquainted with Las Lajas farm through a certain German roaster and every year I sipped these super juicy, complex microlots. Well, and I have never been disappointed!”
Peter: “Coffee complete. Everything is here. Intensity, absurdly high sweetness, notes of fruit, flowers and something with sugar that got a lot of heat and turned brown. All encapsulated in a sticky, dense body. A Carrera 911 among coffees.”

PRODUCER
Francesca and Oscar are the siblings behind the Las Lajas brand. In 2023, it’s a kind of Real Madrid among farms. If you prefer comparisons to literature, well, at least Chekhov. They gained worldwide fame for their innovative approach to processing. They are pioneers in the subject of juicy and fruity Costa Rican natures. This year we were able to visit the farm and taste together the flights that had just left the drying tables. And voila! Seven months later you can se se pour this wonder from the jar!
TREATMENT
Perla Negra is the most famous product on the entire sumptuous Las Lajas menu. The coffee in the whole fruit is pre-dried in the sun. Francesca then covers the cherries with a black cloth, which significantly raises the temperature in the environment, where partial fermentation still takes place. This treatment gives Perla a unique intensity, fruitiness and sweetness. The name comes from the black color that the fruit takes on under such drying conditions.
