TREATMENT
Washed processing is to Kenya as vodka on the table is to Polish name days. Typical and a must have! Before the grains are stripped of their dignity…, sorry, of their cherries, they are first sorted. Then they spend the night doing crazy things, in the sense that they ferment. The next day splash water on the mussel! Well, and then from eight to as many as fourteen days of drying….
FARMA
Several hundred small farmers, hand-picked, selected fruits, all land at the cooperative-owned washing station and there they are embraced by real pros who know what is five and what is eighty-seven and above. A Kenyan classic, that’s how it almost always works there.
