Tapiplaya is back! Coffee that tastes just as good year after year. Lots of lemonade, citrus stories balanced with high fruit and nougat sweetness. We don’t know how they do it, but most likely the keyword is chewing coca leaves. Flowers, but not like in Ethiopia. Fruit, but not that Kenya. Maillard stories, but not like in Brazil. Bolivia and that’s it!

Here we are dealing not with one particular farm, but dozens of small producers scattered around the Caranavi region. It is not uncommon for their plots to be a quarter hectare each. After harvesting, they all deliver the coffee to one place for reprocessing. A bit like your grandfather adding his share of harvested apples from the allotment for a great compote!
It looks a bit like the Ethiopian system here. The machine chamber is empty, the lock is released and the fruit is blended and then processed as one flight. Before washing, they ferment for themselves for 40 hours, which is a relatively long time, finally dry under controlled conditions, and poof, there you go!
One of the more difficult coffees in the roaster, as it is highly capricious and around crack requires the concentration of Magnus Carlsen playing a positionally complex rook. Well, okay, not so much, but you know what I mean. The tip roasts faster than most coffees, but she likes it that way – at lower RoRs she loses her character, c’est la vie!
