The family business of Mr. and Mrs. Ureña, in which everything runs like In a Swiss watch. We’ve been going there for three years now, and it’s a beautiful thing. Vista al Chirripo is the highest plantation on the farm, where a small wooden house stands right next to the trees of this caturra, with windows spanning the highest peak in the country. It cannot be described in words, but if you want to impress someone the most in your life, you will take that someone right there and wait together for the sunrise with a cup of coffee. Just don’t kill the mood with a question about the number of clicks, pliska.
TREATMENT
First, the cherries undergo a short pre-drying process, and then they are sealed for 2 or 3 days in sealed tanks, for fermentation with limited oxygen. Then drying on long African tables under something that looks like your grandparents’ folio on RODos, you know, where they grow tomatoes, cucumbers. Only so with seven times longer.
